Ingredients for Kek Pisang Lembab
For the Cake:
200 gm plain flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
4 ripe bananas (mashed)
2 large eggs
200 gm caster sugar
120 ml vegetable oil
120 ml fresh milk
For the Syrup:
100 gm caster sugar
100 ml water
1 cinnamon stick
2 pandan leaves (knotted)
Instructions
Preheat the oven to 160°C and line a 9×9-inch baking pan with parchment paper.
In a mixing bowl, sift together flour, baking powder, baking soda, and salt.
In another mixing bowl, whisk together mashed bananas, eggs, sugar, vegetable oil, and fresh milk until well combined.
Add the dry ingredients into the wet ingredients and mix until just combined.
Pour the cake batter into the prepared baking pan and smooth out the surface.
Bake the cake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
While the cake is baking, prepare the syrup by combining caster sugar, water, cinnamon stick, and pandan leaves in a saucepan. Bring to a boil and simmer until the sugar has dissolved and the syrup has thickened slightly.
Once the cake is baked, remove it from the oven and let it cool for 5 minutes.
Poke small holes all over the cake using a toothpick or a fork, then pour the warm syrup over the cake, making sure it is absorbed evenly.
Let the cake cool completely in the pan, then transfer it to a serving platter and slice into desired portions.
